This flow chart clearly describes how to produce the smoked fish by using fresh fish in four main stages.
Initially: the killed and cleaned fishes have to be soaked in the salt water for 30 minutes and then heated for 5 minutes.
Moving to the second stage, fishes processed in last step are classified into different baskets according to their size and then heated in the VAT for 30 minutes. Precisdy2 during the heating process, fishes, covered by the wood board are listed on the salt beneath which stones are directly heated by the fire.

The flow chart illustrates the eight-step-process of the production of somked fish . It is clear that the smoked fish production begins with the killing of fish. In the second stage, the fish is preserved in salt water for thirty minutes, after which it is steamed for about 5 minutes .Then, the fish will be put into a bucket which is made of wood.
The bucket is covered by a layer of sawdust and at the bottom of it is the burning coal. The fish is stored in the top of the bucket. The previous steps are the production process called smoking. After that, the fishes will be separated into two groups, the ordinary fishes and the yellow coloring ones. Those colored yellow will be packed into different boxes .
